Menu Plan for Week of December 18, 2011

On the menu this week are lima beans which I happen to love.  A lot of people have searched for the recipe, so I guess there are other takers for lima beans.  I’m also making a batch of baked oatmeal with cranberries and pecans as well as a roast chicken which will have great bones for stock.

Breakfasts: Healthy baked oatmeal, scrambled eggs
Lunches: Leftovers
Treats: Coconut flour chocolate chunk cookies

Dinners:
Sunday: Crockpot lima beans with ham hock, greens

Monday: Healthier taco soup, salad

Tuesday: Stacked enchiladas, Aztec veggies, sliced cucumber

Wednesday: Crockpot roasted garlic chicken, roasted sweet potato, steamed broccoli

Thursday: out

Friday: Indonesian spicy rice made w/ leftover chicken, sauteed bok choy

Saturday: Healthy Chicken soup, winter fruit salad
