Menu for Week of Dec 11, 2011

We didn’t get to a number of things on last week’s menu, so they’ve been moved to this week.  In addition, I seem to be on a sweet potato and peanut butter kick.  Coconut roasted sweet potatoes are on the menu twice, as well as peanut butter baked oatmeal.  The coconut oil imparts a very nice but subtle flavor to the sweet potato and helps the edges to crisp up a bit.  I need to try something with all of these together, perhaps an African style stew with sweet potato, coconut milk and peanuts? Any good suggestions?

Breakfast: Peanut butter baked oatmeal, boiled eggs
Lunches: Leftovers
Treats: Spicy pecans

Dinners:
Sunday: Thai vegetable and chicken red curry, brown rice, sliced cucumbers

Monday: Chipotle meatloaf, coconut roasted sweet potatoes, sauteed cabbage

Tuesday: Leftover meatloaf, beans and greens salad

Wednesday: Cheater’s seafood gumbo, salad

Thursday: out

Friday: Breakfast for dinner: Scrambled eggs and smoked mackerel, roasted sweet potatoes, fruit and veggie salad

Saturday: Cauliflower fried rice with salmon, sauteed greens
