Menu for Week of Nov 27, 2011

I hope everyone had a great Thanksgiving.  For this week’s menu, I’m going for the comfort food: pork tenderloin, roast chicken, and mashed potatoes.  Also, a nice spicy version of chicken soup.  What’s on your menu?

Breakfasts: Peanut butter baked oatmeal, boiled eggs
Lunches: Leftovers, chipotle hummus and veggie sticks

Dinners:
Sunday: Crockpot pork tenderloin, coconut roasted sweet potato, cabbage

Monday: Healthy goulash with leftover pork, salad

Tuesday: Crockpot garlic roast chicken, mashed potatoes, roasted Brussels sprouts

Wednesday: Healthy Mexican chicken soup w/ stock from chicken, tomato salad

Thursday: out

Friday: Chicken and white bean chili, sliced cucumbers

Saturday: Salmon chowder, salad
