Menu Plan for Week of Oct 23, 2011
Last week and this week have been terribly busy which means that I reach for old standbys that I know will turn out well and attempt to cook once and eat twice when possible. On the menu this week is Moroccan chicken stew. I’ll make an extra large batch for lunch leftovers. In addition, with the weather colder, I’m making more spicy dishes like the spicy beef and chickpeas.
Breakfasts: Hummus deviled eggs, sliced pears
Lunches: Leftovers
Dinners:
Sunday: Moroccan chicken stew, steamed cabbage
Monday: Poached salmon, sliced potatoes, kale, sliced jalapenos
Tuesday: Minute steaks with mushrooms, steamed broccoli, salad
Wed-Thurs: out
Friday: Spicy beef with chickpeas, steamed broccoli
Saturday: Leftover beef and chickpeas, rice, apple and greens salad

Like the sound of the Spicy Beef dish…never thought of Hummus deviled eggs!
