Menu Plan for Week of Oct 2, 2011

We are having a bit of Indian summer here, so I’m enjoying the warmth and sunshine.  Our favorite meal of last week were the Moroccan burgers that I made with grass-fed ground beef which I will make again this week.  For this week, a number of old standbys on the menu including lots of salads.  I’m working on transitioning to autumnal ingredients and love the fresh apples and pears.  I’m also looking for a good, reliable flourless chocolate cake if anyone has a good recipe to recommend.

Breakfasts: Boiled eggs, pumpkin yogurt
Lunches: Leftovers, chipotle hummus and vegetable sticks

Dinners:
Sunday: Breakfast for dinner: Chorizo and mushroom frittata, fruit and greens salad

Monday: Salmon cakes, stir fried vegetables

Tuesday: Healthy goulash, salad

Wednesday: out

Thurs: Crockpot garlic roasted chicken, carrots, pear and arugula salad

Friday: Brazilian Seafood stew, rice, steamed broccoli

Saturday: Moroccan lamb burgers, healthy mashed potatoes, broccoli

Made a great flourless chocolate cake the other day for friends and everybody loved it. Go to foodnetwork.com and type “gina’s flourless chocolate cake” in the search bar. I used Kahlua instead of brandy and it was OMG fabulous!
