Hummus Deviled Eggs

I really enjoy deviled eggs.  It’s interesting, for plain boiled eggs, I usually can eat only one or two, but if they are deviled eggs with lots of flavorful toppings, it seems I can eat an endless supply.  In addition to more conventional deviled eggs made with mayo (I tend to use a combination of mayo and Greek yogurt), I like combining the egg yolks with spicy, tasty ingredients and making flavored deviled eggs, like guacamole eggs.  Recently, I had a small amount of leftover chipotle hummus and decided to combine the two and made hummus deviled eggs. They were delicious and I think would work well with any flavor of hummus.

Hummus Deviled Eggs

6 eggs, boiled and peeled
1/4 cup prepared hummus
up to 2 T Greek yogurt or mayonnaise
cilantro for garnish

Be sure the boiled and peeled eggs have cooled sufficiently to handle.  Slice them in half and place the egg yolks in a small bowl and mash with a fork.  Combine the yolks, hummus, and enough yogurt or mayonnaise to form a smooth creamy mixture.  Spoon the yolk mixture back into the egg white halves.  Carefully place one or two whole cilantro leaves over the egg to garnish.
