Menu Plan for Week of Sep 25, 2011

Last week was phenomenally busy, and a number of dinners didn’t go as planned.  I’m looking forward to things calming down so that I can do some cooking or preparing. Our favorite item was the coconut chocolate chunk cookies which I ended up making a second batch of to finish off the coconut flour.  This week, ground lamb is on the menu in a couple of ways as well as poached salmon.

Breakfasts: Guacamole deviled eggs, strawberries
Lunches: Leftovers

Dinners:
Sunday: Sweet potato and black bean chili, steamed broccoli

Monday: Leftover chili, fruit and greens salad

Tuesday: breakfast for dinner: Spinach and artichoke frittata, Bulgarian salad

Wednesday: Moroccan lamb burgers, mashed cauliflower, sauteed spinach

Thursday: out

Friday: Spicy Beef with Chickpeas, rice, salad

Saturday: Poached salmon, potatoes, broccoli
