Peach Lassi
I have been enjoying this year’s stone fruit crop, delicious peaches, nectarines, plums and pluots (have not seen a lot of cherries). Most of the time, I will simply slice the peaches and nectarines and eat, and sometimes I will place them in a simple salad like peach and tomato salad or arugula and nectarine salad. Sometimes, I’ll have one or two peaches that are getting nearly over-ripe, and I’ll make a quick refreshing lassi. I like these as an accompaniment to a spicy dinner (it provides the cooling effect like a yogurt raita) such as spicy beef and chickpeas. Or you can try these for breakfast.
Peach Lassi
2 sliced peaches or nectarines
2 cups yogurt or kefir
ice
honey to taste (I do not use this)
In a blender add the peaches, yogurt, a handful of ice and honey if you’re using. Blend until the peaches breakdown and the lassi is well blended. If it is very thick, add a few tablespoons of water. Serve immediately.
