Zucchini and Feta
Like many of you, I have a lot of squash and zucchini in the fridge. Our generous neighbors gifted us with A LOT. This time of year, I’m always trying new things with zucchini and trying to sneak it into frittatas and soups and muffins. This is a recipe that i made last week, mostly clearing out other items in the fridge, I had some leftover marinara sauce and feta from Greek salads. It is now my favorite way of preparing zucchini. I served this as a side dish with grilled salmon and boiled tiny potatoes.
Zucchini and feta
4-5 medium zucchini, cut into half moons
1 onion, diced
2 cloves garlic diced
1 cup purchased marinara sauce
1/4 t oregano
1/4 t red pepper
1/4 feta
2 T chopped parsley
In a saute pan, lightly saute the onions in some olive oil, add the garlic and zucchini and saute until the zucchini picks up a bit of color, about 5 minutes. Add the marinara sauce and seasonings. Turn the heat down and let simmer until the zucchini is the texture you like, I simmer for only a couple of minutes as I don’t like the zucchini mushy. Turn off the heat and sprinkle with feta and parsley. Stir well to combine and serve immediately.

Hi LIB, no oven, this is supper quick. I like the idea of zucchini pancakes!
