Menu Plan for Week of July 31, 2011

We enjoyed most of the seafood items on last week’s menu, and I’ve put the salmon cakes (in my new baked form) on the menu again this week.  I’ll try to post the recipe later.  Also, this week, I’m using the crockpot a lot to make some basic meat dishes that will then serve as the base for multiple other meals.

Breakfasts: Peanut butter baked oatmeal, scrambled eggs
Lunches: Leftovers

Dinners
Sunday: Pot roast chili, green salad

Monday: Leftover chili, brown rice, fruit and greens salad

Tuesday: Crockpot shredded pork, healthy mashed potatoes, steamed broccoli

Wednesday: Mexican rice bowls with leftover pork, Aztec veggies

Thursday: out

Friday: Healthy goulash with leftover pork, sauerkraut salad

Saturday: Salmon and potato cakes, sauteed spinach, mashed cauliflower
