Menu Plan for Week of July 10, 2011

Last week was a bit irregular with lots of meetings and some meals on the run. I look forward to getting back to more cooking this week.  I’m looking forward to fish tacos later this week, one of my favorite recipes that I keep forgetting to make more often.  Also, peaches are at their peak right now.

Breakfasts: Boiled eggs, summer fruit salad
Lunches: leftovers

Dinners:
Sunday: Country-style pork ribs, steamed broccoli, rice

Monday: Mexican rice bowls with leftover pork, Aztec veggies

Tuesday: Fish tacos made w/ fresh mahi mahi, sliced avocado, ague fresca

Wed: Breakfast for dinner: Mushroom and chorizo frittata, lemon roasted potatoes, green salad

Thurs: out

Friday: Pot roast chili, green salad

Saturday: Leftover chili, garlic and cheese biscuits, fruit and greens salad
