Menu Plan for Week of July 3, 2011

Happy Independence Day weekend for those celebrating! From last week, our favorite was the fajita steak salads.  I really like main dish salads with a good dose of protein, plus fresh crisp veggies. More salads are on offer this week.  I have meetings and some meals out this week, so it is a truncated menu, but I’m excited about the fresh strawberries and plums.

Breakfasts: Spinach and artichoke frittata, strawberries
Lunches: Chopped salad w/ chicken and avocado, leftovers

Dinners:
Sunday: Deconstructed tuna salads (made w/ canned salmon), strawberries

Monday: Healthy goulash, fruit and greens salad

Tues-Thurs: out

Friday: Moroccan lamb burgers, sweet potato salad, green salad, sliced plums

Saturday: Mexican rice bowls w/ leftover burgers, sauteed spinach, avocado
