Menu Plan for Week of June 26, 2011

From last week, which included several incredibly hot days, the main dish salads were the favorite including the Thai steak salad and BLT salad which I like to serve at dinner, rather than lunch or breakfast.  More salads in this week’s menu as well.  In addition, the farmer’s market is brimming with peaches as well as berries, zucchini and artichokes.

Breakfasts: Scrambled eggs w/ salmon, strawberries
Lunches: Leftovers

Dinners:
Sunday: Mexican rice bowls (made w/ leftover pork), Aztec veggies

Monday: Healthy goulash, fruit and greens salad

Tuesday: Birthday dinner out; treats: chocolate dipped strawberries

Wednesday: Salmon and potato cakes, roasted broccoli, vegetable sticks

Thursday: Fajita steak salad, rice salad, strawberry coconut “ice cream”

Friday: Cube steaks, sauteed spinach, peach and tomato salad

Saturday: Deconstructed tuna nicoise salad, sliced nectarines
