Menu Plan for Week of June 5, 2011

The farmer’s market had the first of this season’s fresh peaches.  I’m quite excited and one of my favorites, peach and tomato salad is on the menu twice this week as well as a summer fruit salad.  I also have a couple of spicy dishes on the menu and salads later in the week when the temperatures are supposed to climb.

Breakfasts: Smoked salmon scrambled eggs, summer fruit salad
Lunches: Leftovers

Dinners:
Sun: Sweet potato and black bean chili (w/ grass fed beef), cornbread, salad

Mon: Healthier taco soup, avocado and tomato relish, spinach salad

Tues: Moroccan lamb burgers, peach and tomato salad, greens and beans salad

Wed: Salmon chowder, fruit and green salad

Thurs: out

Fri: Spinach and artichoke frittata, coconut oil roasted potatoes, sauteed kale

Sat: Tuna salad take two, peach and tomato salad
