Menu Plan for Week of May 29, 2011

From last week, our favorite dish was the Mexican rice bowls made with leftover shredded pork.  I like to add a lot of vegetables (sauteed zucchini and peppers) and make a topping of avocado and cilantro.  This week, I’m planning on using the grill, including ribs, as well as grilled vegetables and fruit. We didn’t get to the shredded beef last week, so it’s on this week’s menu.

Breakfasts: Peanut butter baked oatmeal, strawberries
Lunches: BLT salads, leftovers

Dinners:
Sunday: Steak soup, fruit and greens salad

Monday: Barbecue ribs, grilled romaine, grilled peaches, strawberries with cream cheese dip

Tuesday: out

Wednesday: Salmon chowder, garlic and cheese biscuits

Thursday: Spicy cauliflower fried rice, bok choy

Friday: Crockpot shredded beef, roasted broccoli

Saturday: Japanese style curry (leftover beef), brown rice
