Menu for Week of May 8, 2011

Happy Mother’s Day to all the Mom’s out there!  I was visiting my mom a couple of week’s ago, so we aren’t doing anything special today.  However, for this week, we are upping the spice quotient by having spicy foods including chipotle, Thai steak salad and a spicy soup.

Breakfasts: Peanut Butter Baked Oatmeal, sliced oranges
Lunches: Leftovers, salads

Dinners:
Sunday: Tuna salad take 2, w/ steamed broccoli and potatoes
Monday: Breakfast for dinner: Mushroom and chorizo frittata, coconut roasted sweet potato wedges, fruit and greens salad
Tuesday: Country style pork ribs, greens
Wednesday: Mexican rice bowls w/ leftover pork, Aztec vegetables
Thursday: out
Friday: Thai steak salad, balsamic strawberries
Saturday: Steak soup w/ spinach, apple ginger coleslaw
