Peanut Butter Baked Oatmeal

Two of the most popular recipes on this sight are the healthy baked oatmeal and the healthy oat and banana bars which are made with no added sweeteners or refined oils.  Although I don’t eat oats that often these days, my favorite preparation is still baked into nice squares, and served warm with warm milk poured over it.  I was experimenting with various versions of this and I think my favorite is peanut butter (or other nut butter) baked oatmeal.  I make this with minimal sweetener and play up the salty elements and I’ll let everyone add maple syrup at the table.  You can double the quantities and bake in a 9 X 13 inch pan.

Peanut Butter Baked Oatmeal

1 1/2 cups rolled oats
1/2 cup milk
1-2 T melted butter
1 egg
1/2 t baking powder
dashes of salt, vanilla, cinnamon
1/2 cup natural peanut butter, room temperature
1/2 cup roasted peanuts, chopped
up to 1/4 cup brown sugar, optional
1/4 cup unsweetened shredded coconut, optional

In a medium bowl mix all of the ingredients well, be sure to incorporate the baking powder evenly.  Spread the mixture evenly into a greased or sprayed 9X9 inch baking pan.  Bake in a preheated 350 degree oven until set and edges are just starting to brown, about 25 minutes.  Cut into squares and serve warm with milk.  Store any leftovers in the refrigerator and warm before serving.

This sounds so unique and I’ll bet Mr. Sweet and I would love this.
I am going to make it for our breakfast in the morning…now..I don’t have any peanuts so I will try using the Chunky peanut butter..think it will work? I’ll let you know. :)

Hi bj, hope you like this. This recipe is very forgiving so you can change up the type of peanut butter, add nuts, dried fruit, etc… It should be quite flexible. Thanks for stopping by.

Thank you for the recipe, I made it this morning and it was delicious. Next time I will be doubling the recipe. I made it without the optional ingredients and we poured milk over ours. The kids called it a “keeper”. I’m thinking about adding some dried fruit to it next time to make a peanut butter and jelly flavor, or a mashed banana instead of the sugar.

Lieuvena, glad you and the kids like it. I think dried fruit would be great. You can use some applesauce, mashed banana, or canned pumpkin as well. I usually use lots of cinnamon and vanilla and skip the sugar altogether.
