Menu Plan for Week of May 1, 2011

From last week, my favorite was the crockpot lima beans which turned out creamy and delicious.  I’ll say it again, I don’t know why I don’t prepare these more often.  We also really liked the chocolate chunk cookies that I made with dark chocolate chips, coconut and walnut.  For this week, I’m cooking up a pork shoulder and later in the week will try a Mexican twist on beef and veggie soup. Also, lots of salads this week.

Breakfasts: Spinach and artichoke frittata, sliced oranges
Lunches: Leftovers

Sunday: Crockpot pork shoulder, steamed broccoli, greens and beans salad

Monday: out

Tuesday: Healthy goulash w/ leftovers, fruit and greens salad

Wed: Japanese pork curry, rice, salad

Thurs: Mexican cocido or pot roast, roasted broccoli, salad

Friday: Sweet potato and black bean chili (adding any leftover beef), salad

Saturday: Shrimp congee (rice porridge), broccoli
