Menu Plan for Week of April 24, 2011

Happy Easter!  We’re having an Easter themed meal today complete with lamb and asparagus.  In addition, I’m making a batch of coconut chocolate chunk cookies today.  Later this week, I’m planning to whip up a batch (maybe 2 batches, one for the freezer) of chipotle meatloaf.

Breakfasts: Boiled eggs, pancakes w/ low sugar blueberry syrup
Lunches: leftovers

Dinners:
Sunday: Easter meal: Lamb chops, asparagus, coconut roasted sweet potato; coconut chocolate chunk cookies

Monday: out

Tuesday: Chipotle meatloaf, broccoli, chipotle sweet potato

Wed: Healthy hamburger stew (w/ leftover meatloaf), garlic and cheese biscuits

Thurs: Crockpot lima beans w/ ham, collard greens

Friday: Korean rice bowls, bok choy, fruit and green salad

Saturday: Easy enchiladas w/ leftover pork, Aztec veggies
