Menu Plan for Week of April 10, 2011

I think I’m finally getting back into the swing of things and meal planning and preparation.  From last week, our favorite meal was the Thai steak salad that I made extra spicy and lemony.  I have been gifted some nice Asian mushrooms (beech and shitake), so I’m going to try a new recipe for shrimp and mushroom soup.  I also have some pork ribs for later in the week.

Breakfasts: Scrambled eggs w/ salmon, sliced oranges
Lunches: Tuna salad w/ grapes, leftovers

Dinners:
Sunday: Shrimp and mushroom soup, brown rice, beans and greens salad

Monday: Cauliflower fried rice w/ beef, bok choy

Tuesday: Crockpot pinto beans, collard greens

Wednesday: Salmon chowder, fruit and greens salad

Thursday: out

Friday: Crockpot country pork ribs, steamed broccoli, lemon roasted potatoes

Saturday: Mexican rice bowls w/ leftover pork, avocado and tomato salad
