Menu Plan for Week of April 3, 2011

Last week’s menu was disrupted due to some unforeseen circumstances, so I’ve moved a number of things forward to this week.  I’m looking forward to fresh salads as the weather is getting warmer.

Breakfasts: Spinach and artichoke frittata, berries
Lunches: Leftovers

Dinners:
Sunday: Thai steak salad, steamed broccoli

Monday: Steamed shrimp boil, corn on the cob, potatoes, apple and cucumber salad

Tuesday: Pork belly, lemon roasted potatoes, steamed broccoli

Wednesday: Chopped salad w/ seared fresh tuna and avocado, strawberries

Thursday: out

Friday: Meatballs w/ cilantro pesto, bok choy and mushrooms,

Saturday: Hamburger stew (w/ leftover meatballs), salad, garlic and cheese biscuits

I was just introduced to frittatas at a friend’s house. My next must try is an asparagus and leek frittata that I adapted from an epicurious recipe. It’s nice to have so much protein and an easy meal.
