Doubling up Nutrition: Fruit and Greens Salad

For the past couple of years, I have been emphasizing getting a complement of vitamins and nutrients. In addition to having a variety of healthy foods, this includes creating interesting combinations that double up on vitamins, minerals, and phyto-nutrients.  One of my favorite combinations is a fruit and greens salad.  Pairing diced fresh fruit with greens like baby spinach or arugula offers a surprisingly nice combination of savory and sweet. Dressings and toppings can also add healthy fats to further improve nutrient absorption.  The combination works well with a range different seasonal fruit and vegetables:

Apple Cucumber Salad

1 medium apple (such as fuji), diced
1 Persian cucumber, thinly slice
4 cups baby spinach
Olive oil
White balsamic vinegar

In a salad bowl place all ingredients, toss to coat leaves evenly. Serve immediately.

Additional Fruit and Greens combinations:
–Mixed baby greens and fresh sliced peaches with a poppy seed dressing
–Pear and arugula salad with a honey mustard vinaigrette
–Baby romaine, sliced strawberries, sliced red onions with a red wine vinaigrette

This recipe seem tasty. Any idea where can I find a Persian cucumber?

Dan, I found the Persian cucumbers (tiny cucumbers) at Trader Joe’s. If you don’t have that, you can use an English cucumber (about 4-5 Persians = 1 English), or any type of cucumber. If the seeds are large, I would remove them.
