Coconut Roasted Sweet Potato

Sometimes the simplest recipes are the best.  I have tried making oven fries, but they never seem to turn out the way I like, crispy on the outside and tender on the inside. Then I tried making roasted cubed potatoes, then roasted cubed sweet potatoes, then spicy roasted cubed sweet potatoes, and finally coconut oil spicy roasted sweet potatoes.  I will stop there, because this is our favorite combination.  I like using chipotle powder for a gentle smoky taste and some heat. This is a regular feature at our dinner table to accompany a meat dish and a simple green vegetable.

Coconut Roasted Sweet Potato

2 lbs. sweet potatoes, peeled
1/4 cup coconut oil, melted
1/2 t salt (optional)
1/2 t chipotle powder
1/2 t each garlic and onion powder
1/4 t cayenne pepper

Cube the sweet potatoes into 1/2 inch cubes. Toss with the melted coconut oil and seasonings until evenly coated.  Turn out into a roasting pan (I like to use foil or parchment paper lined pans for easy turning), and place into a preheated 400 degree oven.  Roast for about 25 minutes, turning once.  Remove from oven and serve promptly.

Shu Han, I used to roast with butter or olive oil, but the coconut oil (especially extra virgin adds a nice taste). Thanks for the link.

The major fat in mother’s milk is the same lauric acid as in coconut oil. Baby foods all over the world do contain Lauric acid (that from coconut oil) as the prominent ingredient.
