Recipes for Using Up Leftovers

One of the ways that I reduce food waste is to have recipes that are great catch-alls for leftovers.  I will often have a leftover container or ziploc bag in the freezer and put all of the small amounts of leftovers in the bag, then once a month, concoct one of the leftovers.  Remnants of the aging crisper drawer are usually added including onions, celery, carrots, mushrooms, zucchini, whatever is available.  In addition to soups and stews, I like putting leftovers in frittata dishes, curries, and sometimes salads.  Here are some links for the recipes, but you should get creative:

Clean the fridge frittata
Healthy goulash
Crockpot harvest stew
Japanese-style curry
Vietnamese summer rolls
Spicy Beef and veggie soup
Indonesian spicy rice
Spicy rice with cauliflower (grain free for low carb eaters)

Finally, to use up leftover leftovers:
Clean the fridge soup

Great way to use up your leftovers! We generally just eat the leftovers before turning them into a new recipe, but reading over and over how so many moms are turning their leftovers into completely new meals makes me want to try it someday! :0)

I’va actually been working up a series of posts on leftovers! My approach is to work from whole to with increasingly cooked/pureed/mixed options.

And don’t forget, just about anything tastes good under a ncie vinaigrette.

Sandra, my husband can eat the same thing day after day, just reheated. I, on the other hand, seem to hate the repetition, so I spend time morphing the leftovers into something quite different. Fortunately, my husband will eat the morphed leftovers as well.
