Menu Plan for Week of Mar 6, 2011
Last week, we really enjoyed the spicy beef and vegetable soup that cleared out my entire veggie bin! It was spicy. For this week, I have a beef chuck roast in the crockpot and we will have shredded beef in a number of dishes. Avocados and oranges also seemed fresh, so they will enter the menu several times. I’m also trying a lower carb version of Indonesian spicy rice later this week, using cauliflower instead of rice. If it turns out well, I’ll post the recipe.
Breakfasts: Scrambled eggs, pumpkin yogurt, sliced oranges
Lunches: Leftovers
Sunday: Crockpot shredded beef w/ veggies and potatoes, fruit salad
Monday: Leftover shredded beef, roasted broccoli, salad
Tuesday: Mexican rice bowls w/ leftover beef, Aztec veggies, avocado salsa
Wednesday: Breakfast for dinner: artichoke and spinach frittata, sweet potato wedges, fruits and greens salad
Thursday: out
Friday: Healthy goulash made with leftovers, salad
Saturday: Indonesian spicy rice with shrimp, steamed broccoli, sliced apples
