Menu Plan for Week of Feb 6, 2011

From last week, our favorites were the use of leftover pork, especially in enchiladas.  Since I had picked up two packages of pork previously (and frozen one), I will be preparing more crockpot country-style ribs again this week.  However, for the leftovers, I’m planning a sweet potato and black bean chili.  Breakfast for dinner is also on the menu again.

Breakfasts: Mushroom and chorizo frittata, fruit salad
Lunches: Leftovers

Dinners
Sunday: Beef ribs, healthy mashed potatoes, sauteed cabbage

Monday: Healthy goulash w/ leftover beef, cucumber salad

Tuesday: Crockpot country-style pork ribs, sweet potatoes, green salad

Wednesday: Sweet potato and black bean chili with leftover pork, green salad

Thursday: Out

Friday: Sausage and cabbage skillet, potato salad

Saturday: Breakfast for dinner: Smoked salmon scrambled eggs, green salad, fruit salad
