Menu Plan for Week of Jan 30, 2011

From last week, we enjoyed the chipotle turkey meatloaf that will enter into the semi-regular rotation using grass-fed beef when available.  I have the crockpot cooking away today on a huge batch of country-style pork ribs.  It should make enough pork for 3-4 dinners, plus a couple of lunches.

Breakfasts: Spinach and artichoke frittata, sliced apples
Lunches: leftovers, salad

Dinners:
Sunday: Crockpot country-style ribs, Brussels sprouts

Monday: Easy enchiladas w/ leftover pork, Aztec veggies

Tuesday: Indonesian spicy rice w/ leftover pork, bok choy

Wednesday:
Salmon cakes, sauteed spinach, sliced tomatoes

Thursday: out

Friday: Healthy goulash with leftovers, cucumber salad

Saturday: Swiss steak, healthier mashed potatoes, steamed broccoli
