Menu Plan for Week of Jan 16, 2010

Last week, I think we had our fill of chicken, so this week, I picked up some beef chuck roast for a change of pace.  The crockpot shredded beef is one of my favorite preparations.  I’m going to try using leftover beef in the steak soup, and I picked up some mushrooms and fresh spinach for that.  I’m also trying a new treat recipe for chocolate coconut custard. I’ll post it later if it turns out well.

Breakfasts: Pumpkin Yogurt, Boiled Eggs
Lunches: Miso soup, leftovers

Dinners:
Sunday: Crockpot shredded beef, mashed cauliflower, green salad

Monday: Steak soup w/ leftover beef, green salad

Tuesday: Healthy goulash, sliced cucumbers

Wednesday: Spicy salmon patties, sweet potatoes, steamed broccoli

Thursday: out

Friday: Meatballs w/ a simple sauce, sauteed zucchini, sliced carrots

Saturday: Meatball soup (from leftovers), pear arugula salad
