Menu Plan for Week of Jan 9, 2011

Last week, I was planning to make Indonesian chicken w/ soy sauce and ginger and discovered that I was out of ginger. Instead I made a quick mustard chicken. My husband quite liked the mustard chicken and in fact prefers it to the oven fried chicken, so I think this will enter the regular rotation of simple chicken recipes.  For this week, I picked up a big pot of chicken drumsticks which will be simmered in a tangy barbecue sauce.  Oranges are also in season.

Breakfasts: Guacamole deviled eggs, oranges
Lunches: Leftovers

Sunday: Sweet potato and black bean chili, biscuits, salad

Monday: Simmered drumsticks, broccoli, sweet potatoes

Tuesday: Leftover drumsticks, sauteed spinach, beet orange salad

Wednesday: Greens soup, chicken salad w/ avocado

Thursday: out

Friday: Healthy goulash w/ leftovers, oysters and bacon

Saturday: Sausage and zucchini saute, green salad
