Mustard Chicken
I am still exploring quick and easy ways to prepare chicken. My favorite cut of chicken currently is the thigh (with bones and skin). With a savory sauce and baked, the thighs are juicy and much more flavorful than boneless, skinless chicken breasts. Tonight for dinner, I made a quick mustard chicken that was tasty and simple. I served this with steamed broccoli and mashed sweet potatoes.
Mustard Chicken
1/2 cup spicy brown mustard
1/4 cup olive oil
dashes of tobasco
2 cloves minced garlic
1 t dried thyme
1 t rosemary
salt and pepper to taste
2 pounds of chicken thighs
Combine all of the ingredients except chicken in a small bowl. Stir well to mix thoroughly. If you have time, you can marinate the chicken in the mixture for up to 24 hours, which will be more flavorful. Arrange the mustard crusted chicken in a 13X9 inch pan and bake in a preheated 400 degree oven for about 45 minutes until golden brown and cooked through.

SnoWhite, spicy mustard is an interesting ingredient, I am experimenting with mustard in salad dressings as well.

This is a seriously delicious chicken dish. I have made it twice now! The second time I subbed the tabasco for sriracha for a little different kick.
