Menu Plan for Week of Jan 2, 2011

Happy New Year, everyone! For 2011, my goals with menu planning are to incorporate more seasonal foods, try at least one or two really new foods, and to continue the progress with using and morphing leftovers, resulting in less food waste.  Upcoming this week chicken, canned salmon, and a lot of dishes using broccoli are up.

Breakfasts: Boiled eggs, pumpkin yogurt
Lunches: Leftovers, sliced oranges

Dinners:
Sunday:
Salmon chowder, salad, garlic and cheese biscuits

Monday: Indonesian chicken, stir fried vegetables

Tuesday:
Easy enchiladas w/ leftover chicken, Aztec veggies, agua fresca

Wednesday
: Seven veggie and beef chili, apple ginger coleslaw

Thursday: out

Friday:
Salmon with cilantro pesto, steamed broccoli, sweet potatoes

Saturday: breakfast for dinner: Spinach and artichoke frittata, spicy sweet potato fries, fruit and greens salad
