Menu Plan for week of Dec 19, 2010

This week’s menu includes Christmas dinner where I’m planning to serve a rack of lamb and a dessert of coconut custard to be served with cookies.  Since I serve desserts only on special occasions and when we have guests, this will be a rare treat.  From last week, our favorite dish was the simmered drumsticks.  A similar sauce is currently in the crockpot with the country pork ribs which were moved to this week.  Happy holidays everyone!

Breakfasts: Chorizo and mushroom frittata, winter fruit salad
Lunches: Tuna salad w/ grapes, leftovers

Dinners
Sunday: Crockpot country pork ribs, collard greens, roasted carrots

Monday: Healthy goulash w/ leftover pork, sliced cucumbers

Tuesday: Spicy salmon patties, steamed broccoli, sliced oranges

Wednesday: out

Thursday: Moroccan burgers w/ cucumber raita, sauteed spinach, mashed acorn squash

Friday: Cheater’s seafood gumbo, garlic and cheese biscuits, salad

Saturday: Merry Christmas! Rack of lamb, crash hot potatoes, Brussels sprouts, beet and orange salad, coconut custard w/ coconut chocolate chunk cookies
