Menu Plan for Week of Dec 5, 2010

Last week, the marinated London broil and subsequent steak soup (using leftover London broil) were fabulous.  I’m making the steak soup again this week with leftover beef from the freezer and will post the recipe, too.  For this week, I have a giant pork shoulder in the crockpot and continue with the soups and stews.

Breakfasts: Guacamole deviled eggs, pumpkin yogurt
Lunches: Leftovers, tuna and grape salad

Dinners:
Sun: Crockpot pork shoulder, broccoli, sweet potatoes

Mon: Mexican rice bowls w/ leftover pork, Aztec vegetables

Tues: Cheater’s shrimp gumbo, green salad

Wed: Gumbo leftovers, garlic and cheese biscuits,

Thurs: out

Friday: Steak soup, apple ginger coleslaw

Saturday:
Butternut squash soup, zucchini and sausage stir fry, spinach salad
