Menu Plan for Week of Nov 28, 2010

I hope everyone had a great Thanksgiving and isn’t having turkey overload.  Since I had a small group for dinner, we prepared a turkey breast. The last of the turkey meat and stock will be in today’s spicy Mexican soup.  It’s been unusually cold here and I have 4 different soups and stews on the menu for this week including a new steak soup recipe that looks intriguing.

Breakfasts: Boiled eggs, pumpkin yogurt
Lunches: Leftovers, chicken soup

Dinners:
Sunday: Mexican chicken soup (leftover turkey and stock), green salad

Monday: Marinated London broil, sauteed spinach,  mashed butternut squash

Tuesday: Steak soup w/ leftover London broil, marinated carrots, blueberry crisp

Wednesday: Salmon chowder w/ coconut milk, green salad

Thursday: out

Friday: Indonesian spicy rice, sauteed bok choy, cucumber salad

Saturday: Autumn harvest stew, garlic and cheese biscuits
