Menu Plan for Week of November 14, 2010
In this morning’s grocery shopping, I picked up one of the largest butternut squashes I’ve seen and will try some new recipes including roasted cubes and maybe a soup. Right now, pork tenderloin is snuggled into the crockpot, and I’m planning to try a variation on the coconut chocolate chunk cookies. I think it’s kind of a cheat to say that the cookies were our favorite recipe last week (I mean who doesn’t like cookies), but given that they disappeared almost instantly, they go on the regular treats rotation.
Breakfasts: Pancakes w/ low sugar blueberry syrup, fruit
Lunches: Boiled eggs, leftovers
Dinners:
Sunday: Crockpot country pork tenderloin, sweet potato, broccoli
Monday: Sweet potato and black bean chili w/ leftover pork, apple ginger coleslaw
Tuesday: Cheater’s seafood gumbo, green salad
Wednesday: Leftover gumbo, garlic and cheese biscuits, salad
Thursday: out
Friday: Marinated London Broil, Aztec veggies, refried beans
Saturday: Indonesian spicy rice w/ leftover beef, bok choy, fruit
