Menu Plan for Week of November 7. 2010

Last week’s crockpot country pork ribs were so good, that I have another full pot simmering away right now. I snuck in some extra veggies to simmer in the sauce.  I am also planning more seafood this week, with both salmon and rock cod on the menu. Finally, I have a pan of coconut flour chocolate cookies in the oven, if they turn out well, I’ll post the recipe later.

Breakfasts: Poached eggs, sweet potato hash
Lunches: Leftovers, green velvet soup, sliced pears

Dinners:
Sunday: Crockpot country pork ribs, mashed squash, broccoli

Monday:
Healthy goulash w/ leftover pork, chipotle potatoes, sliced pears

Tuesday
: Sirloin steak w/ mushrooms, mashed cauliflower, roasted Brussels sprouts

Wednesday
: Spicy salmon patties, sauteed spinach, beet orange salad

Thursday: out

Friday: Chicken heart stew, salad plate, apples

Saturday: Brazilian seafood stew w/ rock cod, garlic cheese biscuits, salad
