Menu Plan for Week of October 31, 2010
From last week, our favorite was the crockpot pork tenderloin, something that I expect to repeat often over the next few months. For this week, I am trying a new recipe for country style pork ribs, a cut that isn’t so lean that it becomes dry and stringy. I’m also finishing off the last of the pumpkin with more pumpkin yogurt for breakfast. I like it sprinkled with unsweetened coconut flakes and toasted walnuts, yum!
Breakfasts: Pumpkin yogurt, boiled eggs
Lunches: Tuna salad w/ grapes, leftovers
Dinners:
Sunday: Crockpot pork ribs, mashed acorn squash, roasted brussels sprouts
Monday: Salmon chowder, salad plate, apple salad
Tuesday: Leftover pork, collard greens
Wednesday: Oven fried drumsticks, broccoli and tomato salad
Thursday: out
Friday: Breakfast for dinner: Sweet potato hash, poached eggs, winter fruit salad
Saturday: Mexican chicken soup w/ avocado, green salad
