Menu Plan for Week of October 17, 2010

From last week, our favorite was the tasty simmered drumsticks that lasted for 2 dinners plus lunches.  I love the no sugar barbecue sauce that is now my go to simmer sauce for chicken and pork.  I will have to try it in the crockpot with pulled pork someday.  For this week, the crockpot will be doing extra duty with stews and pork tenderloin in mind.  I plan to experiment with a beef bourgignon for the crockpot later this week and will hopefully have a good recipe to post later.

Breakfasts: Mushroom and chorizo frittata, Greek yogurt, pears
Lunches: Chopped salad w/ avocado and canned tuna, leftovers

Sunday: Leftover crockpot harvest stew, pumpkin custard

Monday: Crockpot pork tenderloin, sauteed spinach, mashed acorn squash

Tuesday: Easy enchiladas w/ leftover pork, Aztec vegetables

Wednesday: Brazilian seafood stew, beet and orange salad

Thursday: out

Friday: Leftover seafood stew, garlic and cheese biscuits, green salad

Saturday: Crockpot beef stew, green salad, and cucumber salad, blueberry crisp
