Menu Plan for Week of October 10, 2010
I am having fun with the Fall produce and will have a number of pumpkin and squash dishes on the menu for this week including the yummy pumpkin custard, which is a low-sugar dessert. The barbecue ribs from last week (oven barbecue) were fabulous, I made a double batch of the BBQ sauce and will use that for the simmered drumsticks this week.
Breakfasts: Guacamole deviled eggs, pears, Greek yogurt
Lunches: Leftovers, veggie sticks and dip
Dinners:
Sunday: Crockpot harvest stew, apple and cucumber salad
Monday: Simmered drumsticks, mashed acorn squash, broccoli
Tuesday: Leftover drumsticks, butternut squash salad, mashed cauliflower
Wednesday: Healthy Mexican chicken soup, garlic cheese biscuits, beet and orange salad
Thursday: out
Friday: Green velvet soup, sirloin steak, sweet potatoes
Saturday: Quick tuna pasta sauce over zucchini noodles, pumpkin custard
