Menu Plan for Week of Sept 12, 2010

Last week our favorite dish was the crockpot shredded beef, especially the second day when the flavors had melded more.  I added extra rosemary and thyme for flavor.  I didn’t get to the seafood gumbo, so its on this week’s plan (shrimp is frozen).  Since I was running short of time, I prepared a quick salmon chowder, which used canned salmon and canned coconut milk from the pantry.  It’s helpful to have these pantry meals in mind.

Breakfasts: Spinach and artichoke frittata, yogurt, peaches
Lunches: Leftovers, tuna salad w/ grapes

Dinners:
Sunday: Meatloaf, marinated cauliflower, green salad

Monday: Healthy goulash (w/ leftover meatloaf), peach and tomato salad

Tuesday: Cheater’s seafood gumbo, cauliflower rice, salad

Wednesday: Leftover gumbo, cheese biscuits, blueberry coconut ice cream

Thursday: out

Friday: Green velvet soup, grilled steak, sliced cucumbers and tomatoes

Saturday: Thai steak salad (w/ leftover steak), summer fruit salad
