Menu Plan for Week of September 5, 2010

From last week, our favorite meal was the Moroccan burgers that I served with a cilantro pesto which was made with fresh cilantro, ginger and garlic; so refreshing.  For this week, I have a big chuck roast in the slow cooker right now.  It should make two dinners plus several lunches.  Lots of fresh greens and salad fixings plus the no sugar coconut milk ice cream is planned (I’m loving the combo of blueberry, mango, and coconut flakes).  Happy Labor Day to all workers.

Breakfasts: Fried eggs, berries, greek yogurt
Lunches: Leftovers, chopped salad w/ steak, nectarines

Dinners:

Sunday: Crockpot shredded beef, mashed cauliflower, green salad

Monday: Leftover beef, collard greens, peach and tomato salad

Tuesday:
Green velvet soup, oven fried chicken, sliced cucumber

Wednesday: Leftover chicken, broccoli and tomato salad, nectarines

Thursday:
out

Friday: Cheater’s seafood gumbo, cauliflower rice, nectarines

Saturday: Leftover gumbo, cheese biscuits, blueberry coconut ice cream
