Menu Plan for Week of August 22, 2010

From last week, our favorite was the marinated London broil, that turned out better than expected.  I am planning various future versions of this with different marinade flavors.  For this week, I’ll be trying a pureed soup with green vegetables and bone broth as a way of punching up the nutrition.  Will post the recipe if it turns out well.

Breakfast: Chorizo frittata, nectarines, yogurt
Lunches: Leftovers, Tuna and grape salad

Dinners:
Sunday: Oven fried chicken, collard greens, nectarines

Monday: Leftover chicken, cream of greens soup, pear and arugula salad

Tuesday: Sweet potato and black bean chili, apple ginger coleslaw

Wenesday: Leftover chili,broccoli and tomato salad, popsicles

Thursday: out

Friday: Steak w/ mushrooms and onions, gazpacho, greens and fruit salad

Saturday: Thai steak salad w/ leftovers, peach and tomato salad
