Menu Plan for Week of August 8, 2010
As you may (or may not) have noticed, I have switched our menus over to incorporate more vegetables, grass fed beef, and pastured chicken and pork. For the past few weeks, I’ve tracked the grocery spending, and I’ve been able to keep grocery bills roughly unchanged by looking for seasonal produce and sales as well as emphasizing cheaper cuts of very high quality meat. My recent recipes have reflected these changes. If you’re interested in more on the topic, you might want to check out the post on keeping healthy foods affordable. Anyway, this week on the menu, I’m looking at preparing more leafy greens (I may try a new variation with coconut milk) and a pot roast. We really like the crockpot version where the meat cooks very tender and then is broken up with a fork. I will post this recipe later this week. Nectarines and avocados also seem abundant.
Breakfast: Migas w/ chorizo, cottage cheese, nectarines
Lunches: Leftovers, chopped salad w/ salmon and avocado
Dinners:
Sunday: Crockpot pork tenderloin, mashed butternut squash, sauteed red cabbage
Monday: Indonesian spicy rice w/ leftover pork, bok choy, apple ginger coleslaw
Tuesday: Crockpot shredded beef, roasted vegetables, plums
Wednesday: Collard greens, leftover pot roast, peach and tomato salad
Thursday: out
Friday: Spicy salmon patties, steamed broccoli, cucumber and apple salad
Saturday: Simple shrimp and cheese dish, cauliflower rice, spinach salad

Oooh, that tomato-peach salad sounds wonderful – and a terrific way to use some of the tomatoes I keep picking that are too many to just eat out of hand, but not quite enough to dry or can. . . plus all the gorgeous peaches I keep buying at the farmers’ markets!
