Menu Plan for the Week of August 1, 2010

My goodness, it’s August already.  Well, last week, our favorites were the simmered drumsticks and strawberry coconut ice cream. For this week, summer produce is out so I have radishes, zucchini, and fresh tomatoes and peaches. I think I’ll try some zucchini fritters later in the week if anyone has a great gluten-free recipe.

Breakfast: Guacamole deviled eggs (yes, again!), greek yogurt, peaches
Lunches: Leftovers, Thai chicken salad

Dinners:
Sunday: Super simple lemon chicken, roasted carrots and radishes, beet/orange salad

Monday: Crockpot pot roast, pot roast vegetables, mashed cauliflower

Tuesday: Leftover pot roast, zucchini noodles, apple ginger coleslaw

Wednesday: Salmon chowder, peach and tomato salad, green salad

Thursday: out

Friday:
Zucchini fritters, sirloin steak, broccoli and tomato salad

Saturday:
Unstuffed cabbage w/ leftover meat, summer fruit salad
