Menu Plan for Week of July 11, 2010

Wow, is summer here or what.  I know there’s been a massive heat wave in the US Northeast, so I hope things cool down a bit. From a meal planning perspective, summer is one of my favorite times due to all of the fresh produce.  From last week, our favorite meal was the Thai chicken salad.  Savory, sour, sweet, peppery all at once.  I’m out of cilantro, but this will go on the menu again shortly.  For this week, more salads, lovely plums, avocados, and foods that I can prepare once for 2 or 3 meals like chicken drumsticks.

Breakfast: Guacamole deviled eggs, peaches
Lunches: Chopped salad with leftovers and avocado, leftovers, plums

Dinners:
Sunday: Sweet potato and black bean chili (I will serve beans separately), green salad, popsicles

Monday: Enchilada stacks made w/ leftover chili, Aztec vegetables, plums

Tuesday: Simple tuna pasta sauce over zucchini noodles, apple & cucumber salad

Wednesday: out

Thursday:
Oven fried chicken drumsticks, brussels sprouts, coleslaw

Friday: Leftover chicken, broccoli and tomato salad, peaches

Saturday:
Rosemary grilled sirloin steaks, gazpacho, fruit yogurt popsicles

Zom, kicking myself for not discovering this 10 years ago. Makes a great guacamole egg salad too (just chop up whites as well).
