Menu Plan for Week of July 4, 2010

Last week, our favorite dish was the cheater’s seafood gumbo (simplified version). I’m not sure why I don’t prepare seafood more often, since I do enjoy it.  For this week, it looks like a scorcher, and there’s steak, fresh peaches, and lots of chilled desserts (no sugar) on the menu.  Have a safe and happy 4th of July!

Breakfast: Spinach and artichoke frittata, peaches
Lunches: Tuna and egg salad w/ grapes, leftovers

Dinners:
Sunday: Happy Independence Day: Grilled ribeye, grilled vegetable salad, grilled peaches

Monday: Thai steak salad w/ leftover steak, strawberry sorbet

Tuesday: out

Wednesday: Thai chicken salad, steamed broccoli, berries

Thursday: Mexican rice bowls (will make mine cauliflower rice), Aztec vegetables, agua fresca

Friday: Leftover Mexican rice bowls, avocado and tomato salad, popcicles

Saturday: breakfast for dinner: Chorizo and mushroom frittata, sweet potato fries, summer fruit salad

There’s absolutely nothing like fresh peaches. I’ll have to give grilling them a try!
