Menu Plan for Week of June 20, 2010
Happy Father’s Day to all the Dads out there. On the menu, I’m taking advantage of all of the beef offerings and we are having grilled steak for dinner. I may try to roast the Brussels sprouts in a foil packet on the grill. With plans for leftover steak, Thai steak salad is on the menu again (didn’t have this last week). I also found some great white peaches (to grill today) and plan to have low sugar ice cream for dessert later this week. Summer produce is fun.
Breakfasts: Spinach and artichoke frittata, strawberries
Lunches: Leftovers, chopped salad w/ chicken
Dinners:
Sunday: Rosemary grilled steak, roasted brussels sprouts, grilled peaches
Monday: Thai steak salad w/ avocado, strawberry ice cream
Tuesday: Salmon and potato cakes, sauteed spinach, sweet potatoes
Wednesday: Indonesian spicy rice (maybe w/ cauliflower), stir fried veggies, plums
Thursday: out
Friday: Healthy hamburger stew, green salad
Saturday: Sweet potato and black bean chili, green salad, summer fruit salad

Hi Tara, Hope you like the healthy hamburger stew. During the colder months, I make this every other week or so. It’s a great way to absorb leftovers.
