No-Fuss Grilling Ideas

With grill season in full gear, I am coming up with more ideas for quick grilled meals.  My favorites still include grilled vegetables, chopped up into a salad.  I’m also looking for recipes for grilled sweet potatoes and grilled fish if anyone has any ideas.  Although many people like to use the grill with an elaborate recipe (like a dry rub), multi-ingredient burger, or homemade barbecue sauce; I prefer recipes that are trimmed down and have a few, natural ingredients. My latest experiment is with bacon wrapped chicken.  I use organic drumsticks, an inexpensive cut of chicken.  The bacon bastes the chicken in its smoky, salty goodness, eliminates the need for sauce. I use thick cut applewood smoked bacon from Trader Joe’s; Niman ranch also has a great nitrite free bacon.   I like to serve this with grilled romaine and of course grilled peaches for dessert.

Bacon wrapped chicken

10-12 chicken drumsticks
1 slice of bacon per drumstick
seasoning (black pepper, red pepper, rosemary or thyme)

To prepare drumsticks, sprinkle with seasoning of choice. Take a slice of bacon and stretch it slightly, Beginning at the large end of the drumstick, wrap the bacon slice to encompass as much as possible. Secure with toothpicks if you like (sometimes I skip this and tuck the bacon ends underneath the chicken).  Grill until chicken is cooked through on a medium-high heat (be careful as bacon can burn).  Alternatively, you can bake at 350 degrees for about 40 minutes.

Oh yum. Everything is better with bacon. Definitely going to try this (once our grill gets cleaned!).
