Menu Plan for Week of May 30, 2010
From last week, we enjoyed the crockpot garlic chicken which fed us for 3 dinners plus some lunches. I particularly like the carrots at the bottom of the chicken that cook in pure chicken stock. For this week, it seems summer is here with the weather warmer and more fresh produce showing up. I will make a fresh avocado and tomato salsa, and we’re having the meatballs again. I seem to find a recipe I like and serve it every week for several weeks before finding another recipe.
Breakfasts: Spinach and artichoke frittata, strawberries
Lunches: Leftovers, tuna and egg salad w/ grapes
Dinners:
Sunday: Enchilada stacks with Aztec vegetables (I will have mine deconstructed without tortillas, avocado and tomato salsa
Monday: Dry rub drumsticks, sweet potatoes, collard greens
Tuesday: Grass fed beef chili, apple coleslaw
Wednesday: Leftover chili over sweet potatoes, chopped salad (no chicken)
Thursday: out
Friday: Thai red curry (w/ seafood), steamed broccoli
Saturday: Meatballs w/ simple sauce, brussels sprouts, strawberries

Oh yum! We are trying something similar to your Garlic Crockpot Chicken this week. I did not add carrots or anything though… but if we like it, I will next time.

Hi Dee, the carrots are not essential, but make for a good side dish. Best part is not having to clean the oven afterward.
