Tips for Cookouts

With Memorial Day around the corner, grilling season is officially here. Although my neighbors grill year round (even if it is freezing cold outside), backyard cookouts will be more frequent from now through the Fall.  I like to use the grill to create smoky versions of favorite dishes to treat friends and family. Many recipes are easy to adapt to  Some of my favorites include grilled fish, grilled chicken drumsticks, grilled vegetable salad, corn on the cob, and for dessert, grilled fruit like peaches or pineapple.  You can find the recipes for those items below as well as a quick way to doctor up regular barbecue sauce for a quick tastier version:

Grilled Salsa (great for fish or chicken breasts)
Grilled Peaches (yummy with fresh whipped cream)
Grilled Pineapple
Grilled Vegetable Salad

Super Quick Barbecue Sauce

1 cup purchased barbecue sauce
3 T red wine vinegar
1-2 T sriracha hot sauce
1 T spicy brown mustard
2 T red onion, finely chopped

Stir all ingredients together.  Use as a barbecue sauce for chicken or ribs. I usually brush on liberally the last 10-minutes of grilling.
